I’m a firm believer that the best kinds of treats are those that are freezer-friendly. And, well okay involve chocolate. But seriously, these creamy almond butter chocolates are the perfect meal prep treat. You can enjoy them straight from the freezer! Not to mention, they’re super satisfying and made of just 5 simple ingredients.

If you want an easy and great way to satisfy your chocolate cravings, look no further. These almond butter chocolate cups are a healthier version of Reese’s peanut butter cups, made from high quality natural ingredients. They make the perfect afternoon snack or post-dinner sweet treat.

Easy to Make – With just a few simple ingredients, these chocolates could not be easier to make. While they require some time in the freezer, the hands on time is just minutes. Trust me, if you’re looking for an easy recipe, no bake desserts are the way to go.

Perfect for Meal Prep – One of the best parts about these chocolates is that they are perfect for meal prep. You can keep them in the freezer and pull one out whenever you’re craving something sweet.

INGREDIENTS NEEDED (WITH SUBSTITUTIONS)

These almond butter chocolates are made with just five wholesome ingredients. They’ll be ready to enjoy in no time!

Almond Butter – The main ingredients in these chocolates, almond butter creates a delicious, creamy filling. It’s less overpowering then peanut butter but equally delicious. You can replace the almond butter with your favorite nut butter or seed butter if you have a nut allergy.

Maple Syrup – Almond butter has a pretty mild taste, so I like to add a touch of pure maple syrup to sweeten it up.

Chocolate Chips – These almond butter chocolates wouldn’t be complete without chocolate chips. Any brand of vegan chocolate chips is fine. My personal favorite is the Kirkland brand from Costco – they’re cost-effective and delicious! You can also use melted dark chocolate bars.

Coconut Oil – A bit of coconut oil helps thin the melted chocolate out, as well as create a shiny chocolate that hardens quickly.

Flaky Sea Salt – A sprinkle of sea salt on top brings these chocolates to a whole new level. You can also top with cinnamon, nuts, or even sprinkles!

HOW TO MAKE

These chocolate cups are super simple to make. Plus, all you need is a muffin liner or silicone mold! For full instructions and ingredients, see the recipe card below.

Step One: Whisk together the almond butter and maple syrup, and set aside.

Step Two: In a microwave safe bowl, melt together the dark chocolate and coconut oil. Heat in 30 second increments, whisk, and repeat until smooth.

Step Three: Place the muffin liners in a muffin tin or on a plate. Add half a tablespoon of chocolate to the liner, making sure it completely covers the bottom of the liner. Place in the fridge or freezer for 5-10 minutes, or until hardened.

Step Four: To the top middle of the frozen chocolate, add a dollop of almond butter. Make sure to place the almond butter directly in the middle. This will prevent it from showing through on the sides of the chocolate. Place in the fridge or freezer for 10 minutes.

Step Five: Finally, drizzle a tablespoon of melted chocolate on top of the almond butter. Completely cover the sides and top of the almond butter. Place in the freezer for 5 minutes, add the flaky sea salt, and let harden for 30-45 minutes.

Step Six: Once completely frozen, peel the muffin liner off the chocolates and place in an airtight container. Store in the freezer.

Chocolate Lovers – Add a bit of cocoa (or cacao) powder to the almond butter for a double chocolate flavor.

Sweet & Salty – Add crushed peanuts or pretzels on top of the chocolate before it freezes.

Fruity Surprise – Add a banana slice on top of the almond butter, then cover with chocolate.

Or, add a splash of vanilla extract and cinnamon to the almond butter to add a small boost of flavor!

FREQUENTLY ASKED QUESTIONS

Are chocolate chips vegan?

Not all chocolate chips are vegan, but there are a lot of brands out there that are! Make sure to avoid brands with milk fat or whey protein. Look for dark chocolate chips instead of milk chocolate.

One of my favorite brands is Enjoy Life.

What is the best almond butter to use?

You can use any almond butter you have on hand. When purchasing almond butter, I look for brands with no added sugar, oils, and salt – aka just raw almonds! My favorite brands include MaraNatha, Justin’s, and Kirkland.

Is almond butter healthy?

Yes, almond butter is a great food to incorporate in your diet. It’s packed with vitamin E and omega-3 fatty acids which are great for brain health. Plus, almonds contain monosaturated fat, which is the good kind of fat. Healthy fats like almond butter help reduce LDL (low-density lipoprotein) cholesterol, which is the “bad” cholesterol that you want to stay low.

Can I make these chocolates into other shapes?

Absolutely! You can use any silicone mold for these chocolates. You can prepare them the exact same way. Just let freeze for a bit longer as they can be harder to remove from the mold, as opposed to the muffin liner.

STORAGE & REHEATING

It’s important to keep these chocolate almond butter bites in the freezer, so they don’t melt. You can also keep them in the fridge for about 20 minutes before enjoying if you want them softer.

Place any leftovers in an airtight container in the freezer for up to one month.

Ingredients
  

  • cup almond butter
  • 1 tbsp maple syrup
  • 1 cup chocolate chips
  • ½ tbsp coconut oil
  • 1 tsp flaky sea salt

Instructions
 

  • In a small bowl whisk together the almond butter and maple syrup. Set aside.

  • Finally, drizzle a tablespoon of melted chocolate on top of the almond butter. Completely cover the sides and top of the almond butter with the chocolate.
  • Place in the freezer for 5 minutes, then add the flaky sea salt, and let harden for 30-45 minutes.
