Easy Blue Latte with Spirulina
This blue latte recipe is delicious, relaxing, and vibrant! Plus, the beautiful blue color comes from blue-green algae which is a great source of nutrients. It’s the perfect caffeine-free latte to enjoy at nighttime. Or, mix it with coffee for an early morning boost!

There’s few things better than sitting down with a hot drink after a long day, especially in the cooler months. Plus, this cozy drink is paired with warming spices for the ultimate relaxing night routine. Not to mention, visually it’s also pretty stunning! My personal favorite way to enjoy this drink? With a dollop of whipped cream and a sprinkle of cinnamon on top.

WHY YOU’LL LOVE THIS RECIPE
Minimal Ingredients – This blue milk latte requires just a few ingredients, most of which are simple pantry staples. The main ingredient is, of course, blue spirulina which you can find here. P.S. there’s less expensive brands but this is my personal favorite.
Ready in 15 Minutes – This drink requires just a few minutes to prep and a few minutes to heat up. That’s it!
As Pretty as a Picture – I definitely think food that is visually appealing tastes better! And not only is this latte perfect for those social media pictures, but it tastes delicious and comforting as well.

BENEFITS OF BLUE SPIRULINA
This blue powder packs a powerful punch! Phycocyanin is the main active component which provides both antioxidant and anti-inflammatory benefits. It can also help lower blood sugar, help improve muscle strength and more.
You can buy blue spirulina at your local health food store or on Amazon. While it is expensive, it lasts for a super long time! The shelf life is about 2 years when stored properly, although mine is going on 3 and still works/tastes fine.
INGREDIENTS NEEDED (WITH SUBSTITUTIONS)
To make this blue latte with spirulina you will need the following ingredients listed below. Make sure to read this section if you’re looking to make any substitutions.

Non-Dairy Milk – The base of this drink is made of plant-based milk. You can use any kind of milk you have on hand (almond milk, soy milk, oat milk, cashew milk, etc).
Lite Coconut Milk – Lite (or light) coconut milk adds a nice creaminess and richness to this latte. I find full fat coconut milk to be a bit too rich, so I love using lite coconut milk. It definitely brings this drink to the next level!
If you’re not a fan of coconut you can omit and add more plant milk. If skipping, I recommend using a creamier plant milk such as oat milk.
Blue Spirulina – This latte is made with blue spirulina. Not only is spirulina a great natural dye, but it’s also packed with nutrients and doesn’t have a flavor. Even though it comes from blue-green algae, there’s no taste to it at all (unlike green spirulina which can have a slight fishy taste).
Plus, a little goes a LONG way – so while it may be expensive it will last you for years. I not only use it in lattes, but I also use it when coloring any food, such as these blue pancakes. For a deep blue color you can add more spirulina.
Ginger – Fresh or ground ginger works in this latte. While I used ground ginger, fresh will provide a stronger flavor. Plus, ginger has powerful anti-inflammatory compounds that help alleviate swelling.
Cinnamon – Cinnamon adds a nice warming flavor to this latte. Not to mention it also has powerful antioxidants and is great for cognitive function (especially learning and memory).
Agave – To add a bit of sweetness to this drink, I use agave. You can also use maple syrup, brown sugar or coconut sugar. If using a granulated sugar, add it to the drink while simmering to let it dissolve.
Vanilla Extract – A splash of vanilla extract helps bring the flavors together.
HOW TO MAKE THIS DRINK

Step 1: In a medium pot whisk together the non-dairy milk and lite coconut milk until combined, bring to a low boil over medium high heat.
Step 2: Reduce the heat to simmer. While simmering add in the cinnamon, ginger, and blue spirulina. Whisk together and let simmer for 10 minutes.

Step 3: Remove from heat. Optional (but recommended), mix the drink together using a milk frother. Whisk in the vanilla and agave.
Step 4: Pour the blue milk into a serving mug and top with frothed coconut milk, whipped cream, and/or a pinch of cinnamon. Enjoy immediately!
FREQUENTLY ASKED QUESTIONS
- Can I make this drink with butterfly pea powder?
Yes! If you don’t have spirulina but have butterfly pea powder you can use an equivalent amount in this drink recipe.
Butterfly pea flower powder, sometimes known as blue matcha, is made from butterfly pea flowers which are grown in South East Asia. Similar to blue spirulina it has a natural vibrant blue color and is loaded with benefits.
The main difference between blue butterfly pea powder and blue spirulina is their origins. The other big difference? If you add an acidic ingredient to your butterfly pea flower latte (such as lemon juice) it will change color!

2. Can I add coffee to this drink?
Yes. On it’s own this drink has a subtle flavor so you can absolutely add coffee, or even matcha, to it. You can add a few shots of espresso, or just use as a creamer for a cup of coffee.
3. Can I enjoy this cold?
Absolutely! You can turn this drink into a refreshing summer beverage by making it into an iced latte. To do so, simply pour the mixture over ice and enjoy.

STORAGE & REHEATING
This latte is best enjoyed fresh. If there are leftovers, you can pour them in a mason jar and keep in the fridge for 1-2 days. Before enjoying, give the jar a shake to mix up the spices.
Enjoy as an iced drink by pouring over ice cubes or pour leftovers in a pot and heat until warm.

Blue Latte with Spirulina
Ingredients
- 1 ½ cup non-dairy milk
- ¾ cup lite coconut milk
- 1-2 tsp blue spirulina
- ½ tsp ginger
- 1 tsp cinnamon *or 1-2 cinnamon sticks
- 1 tbsp agave
- 1 tsp vanilla
Topping Ideas
- dairy-free whipped cream
- cinnamon
- frothed coconut milk
Instructions
- In a medium sized pot, whisk together the plant milk and coconut milk.
- Bring to a low boil over medium to medium high heat.
- Once boiling, turn down to a simmer and whisk in the blue spirulina, ginger, and cinnamon. Let simmer for 10 minutes.
- Remove from heat, and optionally, mix with a milk frother.
- Whisk in the agave and vanilla until fully integrated.
- Pour into a mug and enjoy!
Just had 1 issue. The spirulina clumped up when I tried whisking it into the hot pan.

Hi Amanda! Oh no, I’m sorry that happened 🙁 I know sometimes spirulina clumps up in the container when it’s exposed to moisture, but if it didn’t happen until you added it to the mixture that’s definitely odd! I’m not entirely sure why that would have happened, but you can use a hand frother to help separate it or whisk it and then strain the mixture so there’s no clumps in your drink. Hopefully that helps!
Total disappointment. I Followed the recipe to the T. Ordered the exact blue Spirulina. The drink does not turn pretty blue. Flavor is zero. If you made this recipe the way you wrote it, the drink taste bland like warmed up plant based milk. It’s a muddled brownish color. I think this picture was either photoshopped or you added food coloring to the drink to make it a gorgeous blue or maybe we need to put the whole bag of blue Spirulina in. Either way people need to post recipes that are truthful and work. Sad.
Hi Kate, I’m so sorry the recipe didn’t work out for you. The photos aren’t photoshopped at all and that’s the exact amount I used. However, maybe you received a bad batch of spirulina? Either way, that’s frustrating that it didn’t work and I will be changing the link to the spirulina as I don’t want anyone else to receive a bad batch. As far as the flavor goes, it is a mild latte – but this is typically how blue spirulina lattes taste. Again, sorry you didn’t enjoy it!
