WHY YOU’LL LOVE THIS RECIPE
Simple Ingredients – This easy mocktail recipe requires just a few ingredients. Plus, I’ve included substitution ideas below for any ingredients you might not have on hand.
Healthy – Not only is ginger is anti-inflammatory, but it’s also great for digestion. Plus, lime juice provides antioxidants and Vitamin C. And, without alcohol, this drink is safe to consume any time of the day.
Easy to Make – Both the simple syrup and the mocktail itself are incredible easy to make! The ginger syrup requires less than 5 minutes of prep work and about 15 minutes to simmer. And, the mocktail comes together in under 5 minutes.

Fresh Ginger: To make the simple ginger syrup, we use fresh ginger! Not only is fresh ginger loaded with benefits, but it also packs a much stronger, spicier, punch than pre-grated ginger. While I love the flavor of homemade simple syrup, in a pinch you can purchase some.
Sugar: To make a simple syrup, we mix together equal parts water and sugar. And, to give the simple syrup the ginger flavor, fresh ginger simmers with the mixture. If you decide to buy premade ginger syrup, you can skip this ingredient.
Pineapple Juice: A few ounces of pineapple juice, give this mocktail a delicious sweet flavor that compliments the spiciness of the ginger. Not a pineapple fan? You can sub orange juice for a sweet, tropical flavor!
Lime: A splash of fresh lime juice, adds tanginess. It’s important for the lime juice to be fresh, otherwise it won’t provide nearly as much flavor.
Soda Water: Soda water also known as sparkling water, carbonated water, and/or seltzer water brings this drink together.
Agave: A bit of agave adds a hint of sweetness to this drink. You can also sub in maple syrup, or any other liquid sweetener of choice.
If you use sweetened pineapple juice, you can skip adding extra sweetness if you want to cut down the sugar. But, otherwise I think the extra sweetness really brings out the flavor in this drink!
HOW TO MAKE
Making this drink is a breeze! For full instructions and ingredient amounts make sure to see the recipe card below.
Step 1: Begin by making the ginger syrup. To do this, combine sugar and water in a medium-sized pot and bring to a low boil.
Step 2: While the simple syrup is heating, peel the ginger and chop in small pieces. Once the mixture is boiling, add in the ginger and bring to a simmer. Let simmer for 15 minutes.
Step 3: Strain the ginger out and pour the simple syrup into a small jar, set aside to let cool.
If you want an even stronger ginger flavor, you can blend together the mixture. After blending, run the simple syrup through a cheesecloth to filter out any ginger pieces.
Step 4: To a cocktail shaker, add the pineapple juice, lime juice, ginger syrup, agave and shake. Want a stronger pineapple flavor? Add in fresh pineapple and muddle it with the rest of the ingredients.
Step 5: Strain into a glass filled with ice and top with soda water.
GARNISH IDEAS
My favorite way to garnish this drink is by rubbing the rim of a martini glass with a bit of lime juice and coating it in sugar. Then, add a slice of lime to the drink and a fresh piece of pineapple on top!
You can also garnish with lime zest, fresh ginger, or even a few mint leaves.
STORAGE & REHEATING
To store the ginger syrup, pour into an airtight container and let cool. The syrup will thicken a bit as it sets. Once cool, place in the fridge for up to a week.
If you still have some leftover by the end of the week, you can pour into an ice cube tray and freeze. Next time you make a mocktail, add the frozen ginger cubes and enjoy!
P.S. I love using these small bottles I got from Amazon for my simple syrups, but any container will do.
FREQUENTLY ASKED QUESTIONS
Is this ginger mocktail spicy?
No, this drink is not particularly spicy because of all the other flavors that are paired with the ginger. However, if you want a spicier taste, simply increase the amount of ginger syrup in this mocktail.
Can I use store bought ginger syrup?
Yes, if you don’t want to make your own homemade ginger syrup you can use a store bought version. But, I do find the homemade version to pack a greater ginger punch!
But, if you want to save time, this brand is my recommendation. However, any version that is made with just water, ginger, and sugar should do!
How long does fresh ginger last?
Fresh ginger lasts a long time! When stored in the fridge, it can last up to a month. However, peeled ginger only lasts about two weeks. So, if you want to increase the longevity of your ginger make sure to leave it unpeeled.

Ingredients
Homemade Ginger Syrup*
- ¼ cup water
- ¼ cup sugar
- ¼ cup ginger, peeled and chopped
Ginger Mocktail
- 2 oz pineapple juice
- 1 oz lime juice, freshly squeezed
- 1 oz ginger syrup
- 1 tsp agave
- ¾ cup soda water
- ½ cup ice
Instructions
How to Make Ginger Syrup
- Begin by making the ginger syrup. Combine the sugar and water in a medium sized pot and whisk together. Bring to a low boil.
- Once the mixture starts boiling, add in the chopped ginger and reduce to a simmer. Let simmer for 15 minutes.
- Strain the ginger out of the syrup and transfer to an airtight container. Let cool.
- Store in the fridge for up to a week.
Ginger Mocktail
- Add the pineapple juice, lime juice, ginger syrup and agave to a cocktail shaker. Shake and pour over a glass of ice.
- Top with soda water and garnish the rim with lime juice, sugar, and a fresh pineapple slice.
