Recently, I went to Islamorada in the Florida Keys and ordered a coconut and brussels sprout appetizer. If you’re thinking coconut and brussels sprouts…huh? Trust me, I was a bit skeptical. But let me tell you, it was SO good. Ever since my family tried it, we’ve been talking about it nonstop!

So, finally it came time to test my own version, and honestly I think they just may be better than the original. These brussels sprouts are paired with a maple lime glaze and then topped with toasted coconut and almonds for the perfect sweet and savory side dish.

Make these and you’ll be snacking on them like they’re chips! If you know someone who hates vegetables (or hey, maybe that’s you) this recipe will definitely have them convinced.

Easy to Make – The prep for this recipe is SO easy. The sauce and topping take just 5 minutes and preparing the brussels sprouts takes under 10. The only hard part? Waiting for the brussels sprouts in the oven! If you’re serving these as a side dish, you can work on the main dish while they are in the oven (or air fryer) making sure everything is ready at the same time.

Healthy Side Dish â€“ I think making vegetable side dishes that still retain their nutritional benefits is super important. With healthy fat sources (and a little bit of vegan butter!) and a small amount of unrefined sugar, these sprouts taste great while still being good for you!

Super Tasty – And, of course they taste delicious! They’ve quickly become my new favorite way to eat brussels sprouts!

  1. How do I get my brussels sprouts to be crispy?

The texture of brussels sprouts can be a GAME CHANGER! If you’re someone who loves crispy brussels sprouts here are my top tips for achieving that perfectly crispy texture:

  1. Let your baking sheet preheat in the oven – this helps achieve the crispy texture by having your backing sheet essentially act as a sautĂ© pan.
  2. High heat is key! 450F is what is used for this recipe.
  3. For crispy on the outside, tender on the interior bake for 25 minutes. For crispy on the inside and outside bake for closer to 35 to 45 minutes.

2. Should I use the air fryer or oven?

Totally up to you! Both work for this recipe. If you use your air fryer, you can cook at 375F for 12-18 minutes, making sure to shake the basket every 5 minutes or so.

Advantages to using the air fryer? They’ll be a bit crispier and it speeds up the process. However, roasting them in your oven works as well, and if you follow the tips above you can still get them nice and crispy!

3. I have shredded coconut, but not toasted. How do I toast coconut?

To toast shredded coconut, preheat the oven to 300F and bake for 3-5 minutes or until golden brown. If you are using larger shreds, you may need to bake slightly longer.

4. What should I pair this dish with?

5. How should I store brussels sprouts?

If you know you are going to have leftovers I would store the sauce and brussels sprouts separately to avoid sogginess. You can store both in the fridge up to 4 days.

To reheat the brussels sprouts, simply set your air fryer or oven to 350F and cook your brussels sprouts until heated!

Ingredients
  

  • 1 ½ lb brussels sprouts, sliced in half
  • 1 tbsp olive oil

Sauce

  • 1 tbsp vegan butter, melted
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar
  • 2 tbsp fresh lime juice
  • ÂĽ tsp red chili flakes

Topping

  • 2 tbsp toasted coconut
  • 2 tbsp almonds, chopped

Instructions
 

  • Preheat the oven to 450F with the baking pan inside.
  • Toss brussels sprouts with olive oil.
  • Add brussels sprouts cut side down to the pan (be careful it will be hot!). Bake for 25-45 minutes depending on ideal texture.
  • Whisk together the sauce ingredients (maple syrup, vegan butter, lime juice, rice vinegar).
  • Pour the sauce over the brussels sprouts and top with shredded coconut and chopped almonds.
