The Best Stuffed Baked Apples

Easy. Healthy. Flavorful. These gluten free and vegan Stuffed Baked Apples are my new favorite treat! Perfect for weeknights where you’re craving dessert but want something quick and with minimal ingredients. The apples are stuffed with sautéed apples and topped with a flaky crumble. And, I highly recommend adding a scoop of ice cream on top!

HOW TO MAKE

In order to make these Stuffed Baked Apples, they just require a few simple steps.

Step One: To start, make the crumble. Begin by mixing together all of the dry ingredients and then cutting in the cold butter. To cut in the butter, you can use a pastry cutter, fork, or your hands, to crumble the butter into the dry ingredients so that it stays in small clumps.

Step Two: Once the crumble is made, you can set it aside and cut the top off of four of the apples. Then, using a knife, spoon, or apple corer scoop out the inside of the apple, leaving the bottom intact. I like to set aside the tops and discard from the center so I can add it to the apple filling! Alternatively, you can also use it for another recipe (such as apple sauce).

Step Three: The next step is to chop the remaining apple into small cubes and sauté. To a pan add the cubed apple, any apple discard from the previous step, coconut oil (or vegan butter), brown sugar, cinnamon, and vanilla. Sauté over medium heat for 7-8 minutes, or until the apples are fork tender.

Step Four: To assemble the apples, place the apple filling inside, and then top with the crumble. Place on a baking tray and bake at 400F for 20-30 minutes, depending on desired tenderness.

Step Five: Top with ice cream and enjoy!

Stuffed Baked Apples

These baked (and stuffed!) apples make the perfect dessert. They're quick to whip up, healthy, and a crowd favorite!

Ingredients
  

  • 5 medium/large apples

Crumble

  • ¼ cup oat flour
  • 2 tbsp rolled oats
  • 1 tbsp brown sugar
  • 2 tbsp granulated sugar
  • pinch of salt
  • ½ tsp cinnamon
  • 2 tbsp cold vegan butter

Apple Filling

  • 2 tbsp coconut oil/vegan butter
  • ½ tsp cinnamon
  • 1 tsp vanilla
  • 2 tbsp brown sugar

Instructions
 

  • Preheat oven to 400F.
  • Start by making the crumble – mix together the oat flour, rolled oats, both sugars, salt and cinnamon.
  • Next cut / mix in the cold butter by using a pastry cutter, fork, or your hands until you get a crumbly texture. Set aside.
  • For the apples, cut the top off of four of them and set the tops to the side. Using a spoon (or an apple corer) remove the cores, leaving the bottom 1/2 inch intact.
  • Cut the remaining apple into cubes and add to a pan with the vegan butter/coconut oil, brown sugar, cinnamon, and vanilla (I also like to chop up the top of the apples and add in any discard from coring the apples so it doesn't go to waste!). Sauté for 7-8 minutes, or until tender.
  • Add the apple mixture into the cored apples and top with the crumble.
  • Bake on a pan for 20-30 minutes, depending on desired tenderness.
