8 Ingredient Vegan Apple Galette
Easy, simple, eight ingredient vegan apple galette. My favorite recipes are those that are easy but look and taste much more involved – and this galette is just that. Because it comes together so quickly, it’s my favorite weeknight dessert for when you are craving something sweet!
Plus, to make this vegan apple galette extra special, I like to add my simple, homemade caramel sauce and a scoop of vanilla ice cream. It makes it so delicious!

WHAT IS A GALETTE?
A galette is a French dessert that has two main components: A pastry dough and a filling. They are essentially free form tarts (made without a tin) that are slightly folded over the filling. Galettes are popular because of their simplicity and ease to make! They can also be pretty diverse – while this recipe is for a fruit-filled one, you can also do savory galettes.
HOW DO I MAKE THE PERFECT CRUST?
To make the perfect crust you’ll just need to follow a few simple instructions:
- Use cold butter – This helps create a flaky pastry. When you cook the dough, the butter melts, leaving little pockets that puff into layers and create flakiness.
- Use little liquid – This ensures that you have a firm dough that holds the filling inside.
- Let the dough chill – This helps the gluten relax and firms the fat (in this case the vegan butter), plus it lets the moisture absorb into the dough.

Vegan Apple Galette
Ingredients
Crust Ingredients:
- ¾ cup all-purpose flour
- 2 tbsp sugar
- ¼ tsp salt
- ¼ cup cold, vegan butter
- 2-4 tbsp cold water
Filling Ingredients:
- 1 sliced apple
- 2 tbsp brown/coconut sugar
- 1 tsp cinnamon
- 2 tbsp lemon juice
Optional Toppings
- 2 tsp flakey sea salt
- 3 tbsp *homemade caramel sauce see notes
- ¼ cup vanilla ice cream
Instructions
- Mix the flour, salt and sugar together
- Then cut in the cold butter using a fork or pastry cutter
- Add in 2 tbsp of cold water and start to form a dough, adding an additional tbsp as necessary
- Refrigerate the dough for 45 min (or up to a few hours)
- Slice the apples thinly and add in the coconut/brown sugar, cinnamon, and lemon juice (place in fridge while waiting for dough).
- Preheat oven to 375F
- Roll out the dough into a 6-8 inch circle or oval
- Add the apples in the center leaving 1-2 inches around the side
- Fold over the edges and if using, add flakey sea salt and a few drizzles of the caramel on the apples
- Bake for 30 min
- Drizzle the rest of the caramel on or top with ice cream
