Apple Baked Oats with a Caramel Sauce

These apple baked oats are the perfect comforting companion to a warm cup of coffee! Add the homemade caramel on top and you'll swear you're eating dessert for breakfast. It's that good.

Ingredients

Apple Baked Oats

  • ½ cup rolled oats
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 tbsp ground flaxseed
  • ½ cup non-dairy milk
  • 1 tsp baking powder
  • ½ medium-sized banana
  • 1-2 tsp maple syrup / agave
  • ¼ cup chopped apple
  • 1 scoop vanilla protein powder *optional

Homemade Caramel Sauce

  • ½ tbsp coconut oil
  • 1 tbsp almond butter
  • ½ - 1 tbsp maple syrup
  • ¼ tsp vanilla
  • ¼ tsp salt
  • ¼ tsp cinnamon

Instructions

  • Preheat oven to 400F
  • Blend together all the ingredients for the baked oats except the apple
  • Place some of the chopped apple in the bottom of a single serve ramekin, and pour the oat cake batter on top, top with the rest of the apple
  • Bake for 20-25 min
  • While baking, start the caramel sauce by mixing together the coconut oil and almond butter and microwaving for 10 seconds
  • Whisk in the rest of the ingredients
  • Pour desired amount on top of the baked oats and enjoy!
