Ingredients

Scone Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • cup sugar
  • ½ tsp salt
  • cup vegan butter, cold
  • ¼ cup non-dairy milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • ¼ cup coffee or espresso

Cream Cheese Frosting Ingredients

  • ¼ cup vegan butter, softened
  • cup cream cheese
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

Instructions

Scones

  • Preheat oven to 400F.
  • Whisk together flour, baking powder, sugar, and salt in a large bowl.
  • In a small bowl, whisk together the non-dairy milk and apple cider vinegar and place in the fridge for 5 minutes.
  • Add the cold butter to the flour mixture. Either grate the butter in or add it in small cubes. Use a pastry cutter or fork to work the butter into the dry ingredients.
  • To the vegan buttermilk, add the coffee and vanilla. Whisk to combine.
  • Use a spatula to fold the wet ingredients into the flour mixture and mix until a rough dough forms.
  • Pour the dough out onto a lightly floured surface and form into a non-sticky 6 to 7 inch circle, that's about 1 inch thick.
  • Separate into 8 scones and place spaced apart on baking tray.
  • Bake for 18-23 minutes, or until golden brown.
  • Remove and let cool before frosting.

Frosting

  • In the bowl of a standing mixer, cream together the butter and cream cheese until well-combined and lump free, about 1-2 minutes.
  • Add in the vanilla extract and a cup of powdered sugar, whip until combined and continue adding in the rest of the powdered sugar until you reach your desired consistency.
  • Place into a piping bag and pipe on top of the cooled scones. If the scones are too hot, the frosting will melt, so make sure to let them cool. Enjoy!
