Ingredients
Homemade Ginger Syrup*

lime juice, freshly squeezed

Instructions
How to Make Ginger Syrup
Begin by making the ginger syrup. Combine the sugar and water in a medium sized pot and whisk together. Bring to a low boil.
Once the mixture starts boiling, add in the chopped ginger and reduce to a simmer. Let simmer for 15 minutes.
Strain the ginger out of the syrup and transfer to an airtight container. Let cool.
Store in the fridge for up to a week.
Ginger Mocktail
Add the pineapple juice, lime juice, ginger syrup and agave to a cocktail shaker. Shake and pour over a glass of ice.
Top with soda water and garnish the rim with lime juice, sugar, and a fresh pineapple slice.
Notes
*While this recipe makes just 1 serving, the ginger syrup makes around 4 servings - so you will have a bit extra!
