Ingredients
  

  • 8 oz Penne Pasta
  • 1 medium Red Pepper, sliced
  • 1 medium Yellow Onion, sliced
  • cup Cashews
  • cup Nutritional Yeast
  • 1 tsp Salt
  • 1 tsp Pepper
  • 3 cloves Garlic
  • 1 tbsp Fresh Basil
  • cup Coconut Milk
  • cup Pasta Water
  • 1 tsp Red Pepper Flakes

Instructions
 

  • Soak cashews for at least 4 hours in warm water, drain
  • Sauté onion and red pepper with a bit of olive oil over medium high heat for 8-10 minutes, until tender. Set aside.
  • Boil the pasta according to the directions and reserve the pasta water to add to the sauce
  • Add all ingredients, except the red pepper flakes, to a blender, blend until smooth
  • Pour the sauce over the pasta and mix over heat until warm. Top with more basil and the red pepper flakes.
