Blue Latte with Spirulina

- 1 ½ cup non-dairy milk
- ¾ cup lite coconut milk
- 1-2 tsp blue spirulina
- ½ tsp ginger
- 1 tsp cinnamon *or 1-2 cinnamon sticks
- 1 tbsp agave
- 1 tsp vanilla
Topping Ideas

- frothed coconut milk
In a medium sized pot, whisk together the plant milk and coconut milk.
Bring to a low boil over medium to medium high heat.
Once boiling, turn down to a simmer and whisk in the blue spirulina, ginger, and cinnamon. Let simmer for 10 minutes.
Remove from heat, and optionally, mix with a milk frother.
Whisk in the agave and vanilla until fully integrated.
Pour into a mug and enjoy!
