Blue Latte with Spirulina

Ingredients

  • 1 ½ cup non-dairy milk
  • ¾ cup lite coconut milk
  • 1-2 tsp blue spirulina
  • ½ tsp ginger
  • 1 tsp cinnamon *or 1-2 cinnamon sticks
  • 1 tbsp agave
  • 1 tsp vanilla

Topping Ideas

  • dairy-free whipped cream
  • cinnamon
  • frothed coconut milk

Instructions

  • In a medium sized pot, whisk together the plant milk and coconut milk.
  • Bring to a low boil over medium to medium high heat.
  • Once boiling, turn down to a simmer and whisk in the blue spirulina, ginger, and cinnamon. Let simmer for 10 minutes.
  • Remove from heat, and optionally, mix with a milk frother.
  • Whisk in the agave and vanilla until fully integrated.
  • Pour into a mug and enjoy!
