- 1 ½ lb brussels sprouts, sliced in half
- 1 tbsp olive oil
Sauce
- 1 tbsp vegan butter, melted
- 1 tbsp maple syrup
- 1 tbsp rice vinegar
- 2 tbsp fresh lime juice
- ¼ tsp red chili flakes
Topping
- 2 tbsp toasted coconut
- 2 tbsp almonds, chopped
Preheat the oven to 450F with the baking pan inside.
Toss brussels sprouts with olive oil.
Add brussels sprouts cut side down to the pan (be careful it will be hot!). Bake for 25-45 minutes depending on ideal texture.
Whisk together the sauce ingredients (maple syrup, vegan butter, lime juice, rice vinegar).
Pour the sauce over the brussels sprouts and top with shredded coconut and chopped almonds.
