Ingredients

  • 3 small/medium apples
  • 8 egg-less egg roll wrappers
  • 2 tbsp coconut sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • ½ tbsp coconut oil
  • 1 tsp vanilla
  • 1 ½ tsp corn starch
  • ¼ cup water

Caramel Dipping Sauce

  • 1 tbsp coconut oil
  • 1 tbsp almond butter
  • 1 ½ tbsp maple syrup
  • 1 tsp vanilla
  • a pinch of cinnamon
  • a pinch of salt

Instructions

Apple Egg Rolls

  • Chop the apples into small cubes (about 1/4-1/2 an inch).
  • Put the apples in a pan over medium heat and add the coconut oil, coconut sugar, lemon juice, vanilla, and cinnamon. Sauté for 5-7 minutes.
  • Whisk together the corn starch and water and then add it to the pan with the apple mixture and bring to a boil.
  • After the mixture starts boiling, reduce heat to a simmer for 5 minutes, or until the apples are tender.
  • Remove from heat and let cool.
  • Once cool, wrap in the egg roll wrappers (if you've never wrapped egg rolls before I recommend watching a quick YouTube tutorial).
  • Place in the air fryer at 390°F for 4 minutes, then turn over, and cook for an additional 4 minutes.

Caramel Dipping Sauce

  • Microwave the coconut oil and almond butter for 15-30 seconds and whisk together until smooth.
  • Then add in the maple syrup, cinnamon, salt, and vanilla (to get a caramel texture, add more maple syrup if necessary).
